Each year, we ask members to make bløtkake bases for the dessert table at the Scandinavian Fair. All you need to do is bake the basic cake. Assembly and decorating is done on location. Cakes are more moist if assembled the night before, so we ask that you get the cakes to us ahead of time. If you can bring them during set-up Friday night, that would be ideal. Or you can make them now, freeze them, and bring them to the November lodge meeting.
We need to know how much fruit and whipping cream to buy, so please e-mail Luana Jøsvold ( LMJ1705@comcast.net) to let her know how many cake bases you plan to make.
Below is the tried and true basic bløtkake recipe members generally use:
6 eggs
¾ cup flour
2 tsp. baking powder
1 cup sugar
2/3 cup potato starch (or corn starch)
Beat the eggs and sugar to creamy consistency (this usually takes a good 10 minutes and is essential to make the cake high and light–it should be the consistency of whipped cream). Sift together flour, potato starch and baking powder. Add to egg mixture and stir gently until well-blended. Pour batter into well-greased 9″ springform pan. Bake at 375 degrees for 40 minutes or until a toothpick inserted in the center comes out clean.
Luana also needs 1 – 2 people to assemble cakes on Friday evening, and at least one additional heavy-duty mixer to whip cream that evening
